GRANDMA BROWN'S BEANS

Grandma Brown's Beans image

Grandma Brown's canned baked beans are available in the northeast USA but not common elsewhere. They are very simple with only 6 ingredients named on the can. This is a process to recreate them faithfully. Note that these beans are not tomato based, they are thick not saucy, and they are only mildly sweet. The final product either from the can or from the recipe is easily modified to your taste by adding bacon, tomato ketchup, brown sugar, spices. But they are great the way they are. They taste like beans!

KERRY'S BASIC BROWN BEANS

Kerry's Basic Brown Beans image

I love the brown beans at a local diner, but haven't been able to find the right recipe. I finally decided to experiment on my own and here is the result. Basic, good, healthy, and inexpensive comfort food. Topping with shredded country ham or crumbled bacon really takes these basic pinto beans over the top. Also, easily doubled.

Categories     Side Dish

Time 2h55m

Yield 8

Number Of Ingredients 10

1 pound dry pinto beans, sorted and rinsed
8 cups water, divided, or more as needed
6 cups low-sodium chicken broth
1 tablespoon vegetable oil
1 large white onion, chopped, divided
1 (7 ounce) can chopped green chiles
4 cloves garlic, minced
1 pinch salt and ground black pepper to taste
¼ cup grated Cheddar cheese, or to taste
1 tablespoon chopped jalapeno pepper, or to taste

Steps:

  • Place rinsed and sorted pinto beans in a large pot. Cover with 6 cups of water. Bring to a boil; boil for 2 minutes. Turn off heat and let beans sit for 1 hour.
  • Drain beans, rinse, and return to the pot. Add chicken broth and 2 cups of water. Bring to a boil; reduce heat to a simmer and cook, covered, stirring occasionally, until beans are tender and cooked, 1 1/2 to 2 hours. Add additional water if needed.
  • While beans are cooking, place oil and 1/2 of the chopped onion in a skillet. Saute over medium-low heat for 5 minutes. Add green chiles and garlic and saute until onion is soft and translucent, 4 to 5 minutes. Remove from heat and set aside. Add mixture to beans after about 1 hour of cooking. Season with salt and pepper.
  • Serve in bowls topped with Cheddar cheese, remaining onion, and jalapeno.

SWEDISH BROWN BEANS

Swedish Brown Beans image

I belong to a food buying club served by Ozark Co-operative Warehouse. They often run specials on unusual (to Americans) cheeses, rices, beans, etc. Recently I bought a #5 sack of Swedish Brown Beans, but when a searched Recipezaar -- nothing! However I did find this recipe on SOAR: The Searchable Online Archive of Recipes and tried it that night. It made a delicious creamy dish - a little sweeter than most main-dish bean recipes, but very delicious. You can cut down on prep time by bringing the beans to a boil for 10 minutes, then covering. Remove from heat and let sit for an hour. This takes the place of soaking overnight. Make sure your beans are tender before you add salt. (Salt tends to toughen the beans.) Serve with a hearty bread.

Categories     Beans

Time 3h5m

Yield 8 serving(s)

Number Of Ingredients 8

2 cups brown beans, dried (Use Swedish Brown Beans if possible)
6 cups water
1/2 cup white distilled vinegar
1/2 cup corn syrup, dark
3 tablespoons brown sugar, packed
2 tablespoons butter, melted
1 cinnamon stick, small
1 1/2 teaspoons salt

Steps:

  • Pick over and rinse the beans.
  • Add the water and soak the beans at least 12 hours.
  • Bring the beans and soaking water to a boil.
  • Cover the pan and simmer for 1 1/2 hours.
  • Add the salt, vinegar, syrup, brown sugar, butter and cinnamon stick.
  • Stir to mix.
  • Simmer, uncovered, for 1 hour, or until the beans are tender.
  • The liquid should be as thick as a sauce at the end of the cooking period.
  • If the liquid is not thickened, turn up the heat for 10 minutes, or until the liquid is reduced.
  • Remove the cinnamon stick.
  • Serve hot.

15 TYPES OF BEANS — AND HOW TO COOK WITH THEM
15-types-of-beans-and-how-to-cook-with-them image

From allrecipes.com
Estimated Reading Time 6 mins
  • Black Beans. Black beans are a staple in many Mexican and Brazilian dishes. They have a velvety-smooth texture and mild flavor. They also have a lower glycemic index than many other high-carb foods, helping to reduce the spike in blood sugar that occurs after eating a meal.
  • Black-Eyed Peas. This Southern staple has a beige hue with an eye-catching black spot, hence the name "black-eyed peas." They have an earthy flavor that complements salty foods like ham and bacon.
  • Cannellini Beans. Also known as white Italian kidney beans, these cream-colored beans are one of the most common types of beans. They are a popular addition to soups, salads, and many Italian dishes.
  • Chickpeas (Garbanzo Beans) Chickpeas, also known as garbanzo beans, come in two varieties: the larger Kabuli is common throughout the Mediterranean, and the smaller desi is mostly grown in India.
  • Great Northern Beans. This is another type of white bean that is often mistaken for cannellini or navy beans. Great Northern beans are less dense and have more of a nutty flavor than their bean brethren.
  • Kidney Beans. These beans are known for their vibrant red skin and white interior. They have a mild flavor, and make the perfect addition to any chili recipe.
  • Lima Beans. These beans get a bad rap, but there's actually so much to love when it comes to lima beans. They can be white, creamy, or green in color. There are two types: the larger, butter (also called Fordhook) beans, and the sweeter baby lima beans.
  • Pinto Beans. Pinto beans have an orange-pink color with rust-colored specks. Pinto actually means "painted" in Spanish. They're loaded with fiber and protein too.
  • Fava Beans. Fava beans, or broad beans, can be difficult to work with. They require that you remove them from their pods and then blanch them in order to get the skins off.
  • Navy Beans. This bean goes by many names: haricot, pearl haricot beans, white pea bean, and Boston bean. They have a mild flavor and creamy texture, and similar to Great Northern Beans, they do a great job of absorbing the flavors around them.
